I bought some dry bonito here. High quality but you pay for it. The products are traditional, but the packaging and store concept is quite modern. Worth a visit if you are into Japanese cooking.

I came here because I heard that you can enjoy delicious soup stock at the Nihonbashi Dashiba inside the store. There are about 3 round high tables set up in front of the counter, and if they are empty, you can drink there, but if they are full, you will have to take it home or wait with a numbered ticket. Dashi soup is basic ① Bonito flakes ② Bonito and kelp soup stock There are several others (see the website for details), but I decided to compare ① and ② first. ② will contain some stick-shaped kelp. The website says you can use soy sauce or salt as you like, but at the counter I was asked if I wanted to season it with soy sauce. You may be able to choose ``salt'' if you ask. Comparing ① and ②, ① has the refreshing taste of bonito as it is, while ② has the flavor of kelp in addition to that, but it's not too rich and it just plays a supporting role. I liked ①, but your preferences may vary. In addition, I could hardly feel the flavor of soy sauce, so I think it was a really small amount. I bought a dashi pack on the way home. There are variations such as bonito only, kombu seaweed, and chin soup, and I wanted to buy all of them and compare, but I bought the bonito only one. I wish “Dashiba” would also offer Ago Dashi (Reported on 1/4/2024)

《I would like a set of soup and dashi 🍙 for lunch》 Ninben Nihonbashi Main Store is located on the first floor of Coredo Muromachi 1, where you can purchase products and also have an eat-in space. I visited the store before because I was curious about the soup stock, and this time I was interested in the "Dashiyaki Tamago", so I went back for the first time in a few years. The store is right after entering Coredo Muromachi 1, but please note that there is also a eat-in store called "Hanare" nearby. (This is a restaurant with only two standing tables.) During lunch time, they seem to have soup and rice dishes, so I wanted to try the "Kunwa Yakuzen Soup" and some other rice, but I thought it would cost easily over 1,000 yen to order the dashimaki egg and soup stock, so I decided to order it this time. I decided to be patient. lol Once you order and pay at the counter, your food will be served to you on the spot. Please note that the only 2 tables can only be used by 2 people, so when eating in, it seems best to use by yourself or 2 people. I thought the soup stock alone wasn't enough, but the soup for lunch was so delicious that I wanted some soup stock rice balls🥺 (sorry if I overlooked it) This time I gave it a 3.5 rating because I thought it was high for a standing one, but with the bonus, I gave it a 4 star rating!

It's been a while since I last heard from you. It's fun to see so many dashi products that you wouldn't normally buy. I bought a lot of things. I don't think there is any problem with the product. The store is small and it is difficult to navigate the wrong aisles. There are quite a lot of customers because of the location. The staff are busy and busy. There is a long line at the register. There is also a waiting line on the food and beverage side. With so many customers, it's only natural that the staff may not be able to provide enough support. I think it would be a very good store if they could improve that.

I was curious about what I was watching on TV, so I went for a drink during work. The taste is really like chawanmushi! There are no tools included. Since the straw is paper, it has full suction power! lol. The last one doesn't come up easily. There was no place to drink, so I went out, found a bench, and had it there. However, there were no trash cans, so I ended up carrying it all the way to the station, which was a problem.

Oden and soup stock. It was a spring day with a low temperature, but I had cold oden. We would be happy if you could provide us with warm food all year round. The soup stock is consistently delicious.
